The 2017 Estate Cuvee showcases a vibrant nose redolent with blackberry, violet, cocoa, wintergreen and worn leather. The palate is concentrated yet elegant, with layers of pomegranate, rolling tobacco, graphite, and a hint of vanilla. This is pure class all the way through with its silky, seamless, and incredibly long finish. This beauty is capable of laying down for several decades, but why wait? Large format bottles are wonderful in this way: bigger bottles reduce the ratio of wine's surface area exposed to oxygen in relation to its volume, meaning the aging process is slower and the wine will retain greater nuances and freshness compared to an identical wine in a 750 mL bottle.
100% Estate – Adelaida District, Paso Robles.
53% Cabernet Sauvignon, 17% Merlot, 12% Malbec, 12% Petit Verdot, 6% Cabernet Franc -- Destemmed and cold soaked for 8 days with daily pump-overs. 10-day fermentation with a mix of deléstages, pump-overs and punchdowns for cap management. 18-day total maceration.
