Tasting Notes
A beautiful nose of rose petal, red currant, baking spices, and wet slate. The palate packs flavors of raspberry, cedar, orange peel, cocoa, and anise. The finish starts off dense and chewy which yield to elegant tannins on the long seamless finish.
Production Notes
Destemmed and cold-soaked for 7 days with daily pump-overs.
7-day fermentation with a mix of delestages, pump-overs, and punch-downs for cap management. 14-day total maceration.
