2019 Cabernet Sauvignon
Blackberry, violet, scorched earth, and dried herbs soar from the glass, while stylish flavors of currant, cocoa powder, chipotle and seared filet mignon dance on the palate. The midpalate is juicy and silky as it is carried through to the finish by perfectly balanced acidity.
Destemmed and cold soaked for 6 days with daily pump-overs. 5-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 11-day total maceration.

100% Estate “Maidie” Vineyard – Adelaida District, Paso Robles.
Aged for 22 months in 225L barriques: 77% new French oak, and 23% neutral barrels.
