An elegantly pitched nose filled with strawberries, mocha, dark soy, and just a hint of vanilla seduce you on this single-block Cabernet Sauvignon. Densely packed flavors of blueberry, calycanthus, and seared plum evolve into the weighty midpalate that lasts for minutes after the wine is gone.
Production Notes
Destemmed and cold-soaked for 5 days with daily pump-overs.
9-day fermentation with a mix of delestages, pump-overs, and punch-downs for cap management.
14-day total maceration.
