Tasting Notes
Very polished on the nose, this beauty showcases blackberry, sandalwood, humidor, and just a hint of potpourri. The palate is refined with flavors of red currant, black anise, and hoisin. Rich, but not heavy, the voluptuous tannins melt into the incredibly long finish.

Destemmed and cold-soaked for 4 days with daily pump-overs. 8-day fermentation with a mix of delestages, pump-overs, and punch-downs for cap management. 12-day total maceration.
