Tasting Notes
The brightly pitched aromas of black cherry, new leather, cinnamon, and dried bay leaf. The silky palate boasts flavors of red currant, cocoa powder, nutmeg, and chaparral as it leads to the elegant midpalate that is framed with fine-grained tannins and an impressively long finish.
Production Notes
Destemmed and cold soaked for 4 days with daily pump-overs. 7-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 11-day total maceration.
