The 2017 Paladin presents an evocative mix of strawberry, fresh fig, chervil, and black pepper on the nose. The palate offers flavors of licorice, tamarind, cherry, anda hint of chipotle that evolves to a supple mid-palate with great depth and a fantastic finish.
Destemmed and cold soaked for 8 days with daily pump-overs. 6-day fermentation with a mix of deléstages, pump-overs and punchdowns for cap management. 14-day total maceration.
85% Zinfandel, 10% Cabernet Sauvignon, 5% Petit Verdot
Aged for 22 months in 225L Hungarian oak barriques: 60% new, 40% neutral.
